Description

Nigara Hamono 255mm Gyuto VG XEOS Ebony Handle Synthetic Nagura while making swords and kitchen Twitty contends while making swords and kitchen knives are quite different this concentration of skilled craftspeople led Seki to be an important center of knifemaking The shirogami in the core is expertly forged and heat treated The XEOS steel lends some toughness that other thinly ground knives sometimes lack We have not found it difficult to sharpen compared to other Japanese stainless steels and our initial tests point to nice edge life and edge formation from this steel
